Deep Pan Potato and Courgette Omlette
A tasty and filling potato and courgette omlette, that can be served hot or cold as a snack or light meal served with a crisp mixed salad.

Deep Pan Potato and Courgette Omlette
Ingredients
450g potatoes, diced
2 tbsp olive oil
1 large onion, finely chopped
1 garlic clove, crushed
2 courgettes, thinly sliced
1 tbsp fresh taragon, chopped
1 tbsp fresh parsley, chopped
4 large eggs, beaten
salt and peper to season

Vegetarian snack
Serves: 4
Preparation time: 20 minutes
Note: Contains eggs.

1 Boil or steam the potatoes for 5 minutes, do not allow to get too soft.

2 Fry the onions in a large frying pan (one that can be used under the grill as well) over a low heat for 4 minutes until softened. Add the drained potatoes and fry for another 3 minutes tossing regularily so thet the potatoes do not stick, add the courgettes, garlic, taragon and parsley and cook for a further 2 minutes until the courgettes are soft. Season to taste.

3 Pour the beaten egg over the vegetable mixture, and cook over a medium heat until the base of the omlette has set.

4 Finally place the frying pan under a preheated grill and cook until the top has set and begun to brown. Serve with a sprinkling of chopped parsley and a salad of your choice.
