Bell Pepper Salad
A dramatically colourful dish packed full of vitamins and minerals. A recipe perfect for a summers evening, served on a bed of mixed salad.

Bell Pepper Salad
Ingredients
1 tsp. olive oil
4 strips soy bacon
1 large sweet pepper
120g canned cannellini beans, drained
120g garden peas
3 tbsp fresh dill, chopped
120g feta cheese, crumbled
salt and pepper
3 tbsp pine nuts

Vegan meal
Serves: 2
Preparation time: 10 minutes

1 Gently heat olive oil in large fryingpan and cook the soy bacon for 6-8 minutes until browned on both sides.

2 Cut the pepper lengthwise into half without the removing stem. Scoop out the seeds and cut away any white areas.

3 Add the beans, peas, fresh dill, feta cheese to a large mixing bowl and season to taste with the salt and pepper toss the ingredients together to mix.

4 Spoon mixture into each of the pepper halves and sprinkle with pine nuts before serving.
