Nut and Mushroom Loaf
A mouth-watering dish that is equally delicious served hot or cold with salad, alternatively try it with steamed carrots, baby potatoes and a generous portion of sweet garden peas.

Nut and Mushroom Loaf
3 tbsp sunflower seeds
3 tbsp sesame seeds
30ml rape seed oil
1 large onion, chopped
3 celery sticks, chopped
1 red pepper, chopped
225g mushrooms, chopped
1 garlic clove, crushed
120g wholemeal breadcrumbs
120g mixed nuts, chopped
65g sultanas
2cm piece ginger, grated
3 tsp coriander seeds, ground
3 tbsp light soy sauce
2 medium eggs, beaten
salt and pepper
1/2 tsp chilli powder
coriander and celery leaves to garnish

Tomato Dressing
400g canned tomatoes
3 spring onions, sliced
2 tbsp coriander leaf, chopped

Oven temp: 190C, Gas 5
Note: This dish contains eggs (try flour or ground flax seed mixed with a little water as an alternative). The flax seed should be mixed in a blender and left for 1 hour before use.

1 Preheat the oven to 190C, Gas 5.

2 Combine the sultanas, coriander seed and ginger in a small bowl.

3 Mix the breadcrumbs and nuts together (it may be easier to use a blender to chop the nuts).

4 Place a piece of grease proof paper that has been coated with a little oil on both sides into a 675g loaf tin and sprinkle the base with the sunflower and sesame seeds.

5 Heat the oil in a frying pan or wok, add the chopped onion, celery, pepper, mushrooms and garlic and cook on a low heat until the onions have softened.

6 Remove the vegetables from the heat and add the breadcrumb and nut mixture, followed by the sultanas, soy sauce and chilli powder, season and mix well.

7 Finally stir in the beaten egg. Transfer the mixture to the loaf tin and bake for 45 minutes in the center of the oven.

8 Combine the dressing ingredients together and store in the fridge until the loaf is cooked.

9 When the loaf is cooked allow to cool for 5 minutes before turning out onto the serving dish. Garnish with the celery and coriander leaves.
